Flair It would be my choice for Pex.
You can hand tighten the fitting on pex, so you can get into those tight spots.
I carry a supply of Flair It in my MH.

P.S. And you can unscrew Flair It and take it apart by hand and then put it back together with out any cutting.

There may be 2 support structures, 14" apart, running the length of you coach. That's what Fleetwood did when they built my 95 Bounder. Get a stud finder and have a look. You could fasten to those supports if they exist.

The devices that have the wire wrap around a screw are not appropriate for the vibration environment in an RV. You need to choose ones with screw clamps, often labeled as "commercial". Even back-stab connections are more reliable than wrapped screws in an RV.
People often say that RV self-contained devices are junk, but the ones by the major suppliers are approved by UL and CL and are perfectly safe. They are specified in the National Electric Code (NEC). They do have to be installed correctly using a special tool.
People used to say that crimp connections were junk, however that is the only kind of connection you will find in a modern automobile because they are the most reliable.

The RV receptacles are good if installed correctly.
Screw downs get loose shaking down the road.
Look at how many problems have ben posted about circuit breaker panels.
The OEM receptacles in my 95 Bounder are still good.
They get used for 1500 watt heaters with no problem.

I suspect you may have a catalytic converter that is not flowing freely.
That will cause the exhaust manifold problems and power loss.

good point, is there a way for me to check that or is it something they must do a the shop?
A pressure gauge in the O2 sensor port would tell a lot.

I guess we all have our needs. We're still old school. We snowbird in the BLM desert. Have to dump about every 10 days. Fill propane about every 45 days. 600 watts of solar keeps the batteries up.
If we don't like our neighbors, we move a mile or 2.
It's cheaper than living in our sticks and bricks.

All of our RV waste tanks smell. The answer is to correct the leaks.
Most likely you have bad air air admittance valve under the sink or lavatory.

The key word "MOUNTED" means that it should not NEED recertification.
Only luggable tanks need that.
You are absolutely correct for USA standards.
You are absolutely incorrect for Canadian standards.
I can not fill my 28 year old ASME tank in Canada.

Marine/RV batteries are compromise batteries. They were developed for marine trolling and engine start. They do not excel at either.
For you application a standard lead cell starting battery is your bet choice.

You’re right about the first part, sort of. They’re actually just fine for starting and will take the short term high amp loads just fine but they’re a compromise for deep cycle/ house battery use like trolling motors and campers because they have more/thinner plates to accommodate the high amp loads.
Second part you’re completely off/backwards. A dedicated starting battery while it will do the same job as a deep cycle, it won’t do it near as long before it’s worn out. That’s why true deep cycles aren’t suitable for high amp starting loads. They have thicker plates that last longer under discharge conditions that a good operating starting / charging system keeps from happening.
It is my understanding that the OP was looking for a starting battery. Which makes my comments correct.

If Remco listed a towing kit for a 2010 Toyota RAV4 AWD, then it's NO problem. Remco did their research before they offered a pump kit for any vehicle.
I towed a 2003 PT Cruiser automatic for several years with a Remco pump kit. The car is still in service by the 3rd owner.
What is not mentioned is the mileage. When towing NO mileage is registered on the odometer. So you don't know how many miles are on the running gear.

I'm 80, wife will be 80 on 9/11/23 (I won't forget that birthday!). We still do summer chapter weekends and snow bird. It's not as easy as it used to be, but we still do it.

Twice I've hade alternator failure while on the road. My system charges all batteries from all sources. All I had to do was start the generator and finish the days drive. Alternators are easy to find for a 460 gasser.

Holiday Rambler Alumalite 1986, came as a Travel Trailer, class C & class A.
Assuming you have a class A MH, it would be on a Chevy P32 chassis.
That chassis has a bell crank in the steering linkage that was not the best when new. Have some one shake the steering wheel and see if the bell crank moves up and down. If so, replace it with a Bell Crank from Super Steer.

Really? I didn't know there was a bell crank, I don't have anyone around right now to do anything, but I checked and there sure is a bell crank. Thank you for the link also. Ill ask a friend if they can come over tomorrow and we will yank a bit on it see if there is anything loose there. I am also going in for a tire inspection tomorrow so hopefully whatever it is is found out!
To test the bell crank properly, you need the tires on the ground and move the steering wheel back and forth. That applies the same pressure as when driving. Yanking on the bell crank by hand will not show the failings you need to see.

The remote switch wiring is plugged into the generator. That connection probably needs cleaning.
