We're considering buying a 26' class A with either gas or diesel and tow a 2000-4000 lb vehicle. What sort of mileages Should we expect with and without the toad?

I would estimate about 8 +/-.

Without knowing anything at all about the vehicles involved, there is nothing certain that can be said. Generally, towing with a 26' foot gas engine, you will be running 8~9 depending on the terrain and your driving style. A diesel in the same place will be running 10~12 but will have significantly less horsepower at low elevations, but since most are turbocharged, it will lose less with altitude.
That is the best guess you will get.

With a V10 gas & toad, I got about 6.5 mpg going to Lake Tahoe on the 395 from North San Diego area and about 7.5mpg on the return trip.

31', V10, class A gas with Chevy Tracker toad getting 8-9 mpg overall. Seems like that's pretty much average wether on flat or hills. Of course I don't push real hard either and try to stay around 58-63 mph.

SO MANY variables, but the general consensus would seem to be that an MH gets about 6-10 mpg (8+/-), with a toad, just slightly less. An exception maybe the sprinter based Mercedes diesel (ie Winnebago Via).

We loose about 1-2 miles per gallon on the highway towing the jeep. We don't tow around town so ?

With my 30' gas C my toad costs me .5 mpg. Diesel will get better mpg but fuel economy overall will be about the same when factoring the higher cost of buying diesel. Not many diesel As in the 26 foot range. You will see some Safari Trek models with the Isuzu diesel. They get pretty good mileage but don't have any power.
