A couple for us
The Pink Hotel on the side of the Copper Canyon, http://hotelesbalderrama.com/mirador.htm This is RV related because we stayed at the old KOA in Creel and took the train down to stay at the hotel.
The other was a eco-dive resort on the Atlantic side roughly 50 miles North of Belize. RV related because a couple we met there had driven in their Motorhome and the resort let them camp on the road to dive at the resort. Was lucky enough to be there before the Cruise Industry came in and ruin the area with a pier and expansion of there routes. Called Maya Hal in those days. There was just a little dirt road that went a long the coast and nothing else. Was great! This it now, http://www.mayapalms.com/

In my estimation, the best gorditas in all of Mexico are served here at the train station.

Maya Hal is now called Mahahual. And when we spent the winter boondocking on the beach there the cruise ships only came in on Monday, Wednesday, and Friday. So we had the other 4 days to enjoy the beach and malacon without the crowds. I've heard that now the cruise ships have increased to 5 days a week.
I've also heard that the spot we were boondocking at is now being turned into a regular RV/Tent Camping area with some hookups. Depending on the camping prices, we would love to return; even with the increased cruise ship schedule

It's only 120 pesos a night and a nice place to camp. The boat people don't really seem to get that far down the malecon. Plus they are all gone by about 3 PM.
