We've been 2 years on the road in our 5ver, the last 2 times setting up it seems we are getting all sorts of movement when we walk around inside. Nothing has changed as far as I can tell, the only thing I might have done is the front jacks, I let the extensions out most of the way instead of lowering the sleeves they go into. Other than that I can't find out why it seems it is "rocking" when we walk around. Any ideas?

Does the site surface make a difference in the amount of movement? Concrete should be the most stable then gravel then grass.

Yes it would be spongy on grass.

The more the jacklegs are extended the more movement you will get. In ours, if I drop the extensions then lower the legs to level the rig, it moves. If I use the leg itself, with out droping the extension we have a lot less movement. Same with the back jacks, the more extended, the less stable.

Multiple things can affect wiggle. Has your trailer gained weight? Have you tried JT Strongarms? Roto-choks often help. Maybe just a couple adjustable jack-stands under the frame near the axles as it sounds like suspension bounce to me. Even tire pressure can affect this. If it has changed over the years look for what else has changed in your rig.
Mine varies slightly depending on surface it sits on, but we keep the weight as constant as possible as well as chocking tightly and using center jacks.

My Carriage owner's manual advises to lower jack legs to within 6" and not less than 10" from the ground. Jack legs have strength and therefore aid in stabilization, extensions inside them are there for leveling purposes only.

I try to practice this and do not have any added aftermarket device, just fore and aft jacks and notice very little movement. Hope this helps. Good luck and happy and safe camping.
