SandeesAR, I tried using a small, single cup coffee maker (uses the coffee pods), but there wasn't enough space between the top of the unit and the overhanging "ceiling" to pour in water. Do you have the coffee maker Velcroed to the counter top, or do you pull it out to load the water?

I am a new kid on the block to RVing. I bought a 94 Dodge Pleasureway in April and have made several camping trips so far.
My RV is an oversized 72 hour kit for the day the big earthquake hits.
Well, not just that, it is covered with patriotic decals, and is used for a Veterans Information Point. Tooele County Utah gets an hour of veterans outreach twice a month, Wednesdays at noon. Returning vets don't want to take time off work to get info, as many of them didn't find their jobs waiting for them like the law says they would be.
So I am setting up schedules to be available on Saturday mornings. Put out the awning, some music, led signs welcoming vets and/or spouses,and displays (still a work in progress). Got some private issues, move inside the RV.
Also on Search and Rescue. Installing ham radio gear and antenna's are a challenge. When I get a total handle on this, I will take pictures. This is a mini command post for me. I will have HF capability, cb/frs/gmrs, vhf/uhf, and D-STAR. Retangular tabletop will rest on chair arms for laptop computer, HF rig and tuner, and whatever else.
My wife is a homebody, has not ridden in the RV, which I have nicknamed Crime Scene.
Space is an issue. Wont remove doors. Leave the closet and bathroom doors open at night so I don't have to close curtains on the windshield.
Pulled out old tv, hung a 19" lcd on a pair of door hinges so I can store a cowboy hat behind it (and pistol). Reduced several camera's and len's down to a Canon Powershot SX20 IS with a 20X zoom, 12 megapixals, and HD video. Next compartment down has Blu Ray player, and CPAP and other electronics. Bottom compartment is full of DVD's. (Strapping the beer to the drive shaft is starting to sound like a good idea).

I used to lay awake in the back of the roadtrek (1996V) and try to figure out how and where I can make more storage...
I am very proud of these creative ideas which I will pass on.
Remember-velcro is your friend.
I doubled my counter space by storing a plastic cutting board that fits over the entire sink. I put velcro on the back and it fits perfectly flat up against the cupboard door. I did the same with a thin piece of board to cover my silverware drawer and the velcro holds it against the closet door. Takes up zero space.
I added a shelf (with a lip made of molding) above the tiny kitchen window. It's about 4 inches wide and holds a multitude of stuff.
One of my favorite mods is the 3 extra storage areas I made using plexiglass. I used clear acrylic so I would not block the sunlight. They are about 4 inches high. The first was on the tiny kitchen window, running the entire length of the window. The others are on the two rear windows. They can hold a multitude of... stuff. And when empty, are invisible.
The one I just finished is a huge shelf that runs from the tv cabinet to the back door above where your feet go. And, no nails! It can come down and you would never know it was there. I love it.
It's a wire closet shelf I bought at walmart. Cut off a few inches and used that piece to hold the end up by the door from the ceiling. And I did it all with those command hooks with the glue you can remove. It's a fabulous idea if I do say myself.

I did win at the first "B Rally" for carrying the most 'stuff' (crap).

One reason I love our high-top: more wind resistance and less mpg, but a lot more storage space, as we use the upper sleep area for bedding, clothing storage, and we keep bicycle related items up there as well. Everything in it's own bag or storage box for easy access.

There are somew great ideas here. I am going on a 2-3 week trip in December, and I am thinking about what I can do to make space. I plan to go through everything I have in there and decide if I need it for this trip,..if not it goes into a bin and into the garage,
I actually carry my bike inside standing up behind the drivers seat. It rides quite well there,..but it is going out for this trip. I also bought a back carry rack,..but I still need to get a hitch to attach it. I may put my electric scooter (wheee) on it if thwe weather looks ok.(yeah I will cover it with a tarp,..but if raining where I am headed, might as well leave it at home)
I carry a large ice chest where I put my cold food with ice (can you run your icebox going down the road?? I can't..I don't think (it is a three way,..but I think it will only run if I run my generator,..help me with this one!!!!)
I pre make some cassaroles, freeze them and put them in the ice chest,..then I either nuked them (I bought a small small microwave on ebay)or pour them out into a cast iron pan and heat it,..saves a lot of time and space.
I put my fishing rod in the top rack with a fishing bag with all my tackle in it. I use a fold up camp chair with a top cover for sun,..it rides on the extra bed in the back. Clothes in closet next to shower,..hanging and in a small bin.
I have to shift things depending on the trip,..but there is a fair amount of room for all sorts of "stuff",..if you really think about it.
One of the entries is from someone who is setting up their Ham radio. I would like to hear how you are doing that. POwer source from house battery of van battery? How are you attaching the antenna? ( I am putting in an Atas HF antenna and just mag mount my 2/440 antenna, also CB antenna (heck of a lot of mag mounts)
Sooo if anyone has answers about my rerigerator and how to attach all those antennas and where you are putting you radio gear,..let me know

Wanwid...I can't help you with your other problems, but as far as the frig is concerned, if you have a 3 way you should be able to run in on DC (battery) while traveling, AC (electric) while hooked to power, and propane if you stop (eat, shop..etc) for longer then a couple of hours or parked without electric power.

I bought these chairs (that fold up twice) at a garage sale last weekend. They are very comfortable and take up very little storage space in my Class B. ( 2 bucks a piece ! )

I recently purchased my RV on Oct. 15. From looking at the exterior, my friends cannot believe how roomy my interior is for it's size.
