The big issue is total weight and weight distribution. Don't get to an over load condition.

Your available fresh water can be better managed by learning how to minimize your need. Taking GI showers learning how to brush teeth without water running, etc. Thats how the vast majority of RV/Boondockers do it.

Your best option would be to replace your existing tank with a larger one. This would keep your weight centered where is currently is.
That is providing your not going to overload the rig and you have room to do this. Than you don't need any fancy plumbing work.
