I have a 2005 Itasca Suncruiser, 8.1 liter Vortec, with an Allison transmission.
Is there a removable plug that permits a temperature probe to be installed for a transmission temp gauge?
If not how do you install one?

Not sure whetehr the allison has a place but a Scan Gauge II should read it and will give you access to a lot more parameters as well as having an OBD II code reader. Plus you just connect it to the diagnostic port.

I have the allison 5 speed and I bought the Scan guage II and it just plugs into the OBD II port and then you can enter the code that they provide for the allison and get the transmission temperture along with other readings, too numerious to mention here. Works great. read about it here. Scan Guage

If you have a pan without a port for a temp gauge, you can remove the pan, drill a hole, and weld in a "bung"- available from hot rod and other parts suppliers.

Or you can break into a cooler line with a "T" fitting and install a temp sensor there.

There are many "discussions" about whether it's better to measure pan fluid temp or hot fluid coming out directly in a line.

I always worry a bit about some big heavy lump of metal hanging out there vibrating on those lines with my precious fluids running through it, so I kinda go with pan fluid temps.
