All vehicle Air Conditioning systems are purposefully designed for the system to shut down on Wide Open throttle or heavy engine load.
In the system there is what is called a WOT cutoff. When the throttle reaches a specific point it disconnects the electrical circuit to the Air Conditioning compressor. Some systems also shut down the fan as well.
This is done to allow as much engine horsepower for the wheels. The A/C compressor can cause considerable strain and horsepower loss to the engine.
I would say that if the system operates normally within seconds of your releasing the throttle then the system is operating as designed.

Most, but not all. Some run the A/C even at WOT.
In many vehicles, it's less to reduce the drag on the engine than it is to prevent compresors from failing due to high RPM's.

That makes perfect sense.
I was taught that it was to provide more HP to the drive-train rather than the A/C compressor robbing it.
Of course my training was in 1980-1982 and then refresher courses in 1990 and then in 1998 I went to R-12 to R134a conversion classes. So my training is a little old and I have probably forgotten more than I remember since then!
I guess age may be getting to me!
