Topping:
1/3 C butter
1 C packed light brown sugar
1/2 t ground cinnamon
2 T light rum
3 C sliced bananas, cut on the diagonal about 1/3 inch thick
Cake:
1 package butter recipe golden cake mix
8 T (1 stick) butter, melted
1 1/2 C whole milk
2 large eggs
4 t fresh lemon juice
1. place rack in the center of the oven and preheat 350
2. Prepare the topping. Place butter in a 10" cast iron skillet and heat the skillet over low heat to melt the butter. Remove the skillet from the heat and, with a fork, stir in the brown sugar, cinnamon, and rum. Using the fork, spread the mixture out evenly in the bottom of the skillet. Arrange banana slices over the bottom of the skillet so they cover it well.
3. Place the cake mix, melted butter, milk, eggs and lemon juice in a large mixing bowl. Blend with an electric mixer on low for 1 minute. Scrape down the sides of the bowl. Increase mixer speed to medium and beat for 2 minutes, scraping down sides if needed. Batter should look creamy and smooth. Pour batter on top of the bananas in the skillet smoothing it out. Place skillet in the oven.
4. Bake the cake until it rises high in the skillet and springs back when lightly pressed, 43 to 47 minutes. Remove skillet from oven and run a sharp knife around the edge. Carefully invert the skillet onto a heatproof serving plate. Cake should release itself from the skillet.
This cake is best served warm with vanilla ice cream or whipped cream.
I found this recipe in one of my recipe books and I would love to try it....but....I do not have a cast iron skillet - can I use any oven proof skillet? what do you think?

Amazing..I just checked the kitchen and I have ALL the ingredients for this...I'm going to suprise the family tonight with pepper steak over whole grain rice and this! Thanks!

Your recipe is similar to this recipe from the past.......which we've made in a 9x13 pyrex dish........comes out perfect!

You can do this recipe in a dutch oven outside using charcoal as you would for most other dutch oven cooking. I have cut a piece of 1/4 inch plywood big enough to cover the dutch oven, line it with foil, that I use to put on top of the dutch oven when you turn it over to release the upside down cake. I mostly make Pineapple upsidedown cake so I will have to try this Banana recipe.
