My thoughts are:
Bigger is better, in general.
Pay attention to the kitchen design and pantry storage. You will likely be preparing lots of meals in your trailer, which is somewhat different than the average weekend recreational user.
Consider deleting the standard furniture that really isnt comfortable and buy furniture that is.
Look for a way to add a small ac only frig, it seems we were always running out of frig room until we added an additional ac frig.
Buy a high quality sewer hose and connections, buy never kink water hoses, and add quick connect connectors.
Make sure you have a method to flush your black tank, either with a built-in flush or add on flush.

50 amp service has not been mentioned. IMO it is very important as is a sealed and heated underbelly.

What the heck is snowbirding all about then? Heated underbelly? R values? Insulated ? If it is under 60deg or over 85deg you are in the wrong place SNOWBIRDING.

You mentioned brands: Arctic Fox is one of the few recommended for snowbirding by RV.org. We bought it on that recommendation even though we are fulltiming. Not as fancy or well built but as the full-time names but very, very solid. It's sold as a four seasons rig so is all insulated with storm windows or thermopane as options.
We snowbirded in our Springdale for two winters. No regrets but things like the couch started fraying, the fake wood peeled in places, vinyl showed wear and the interior temps would almost reflect the outer temps--didn't hold heat or cold well.
Spend the $150 or so for the RV.org info on trailers/5ers. It is worth every penny. You won't regret it.

If we had it to do over again we would have skipped the RV part and rented a Park Model for the first Snowbird trip, then decide on RV vs Park Model. Our intent was/is to get away from the snow as opposed to being mobile in the south. A Park Model without an add on is about 399 square feet (in AZ).

Three things that were a must for me.
1. Lots of windows, no dark box for me.
2. Large counter space, wife like to cook & bake.
3. Well located entertainment space. Something that is comfortable to watch TV from.

Well folks, I surly do appreciate the info given! We may go 30'+ looking for lotsa storage and windows. We like the rear living room style with the single big slide over the axles for the sofa and dining room table. A 5th wheel would be a hard sell for us. We like our mobile storage shed, (truck bed and topper), too much to give it up. Only "knock" on the larger TT's is the overall length of TT+TV. Might be difficult to maneuver in some RV parks, etc.

Just a note of caution here.
I'm not a big fan of large living room windows that look out the back. You see these mostly on 5th wheels. The problem is you are often parked back to back in these large Snowbird parks, all you see is the other guys large window.

We were snowbirds in Texas last year (which had unusually cold weather) in a 24 foot Terry Lite fifth wheel with one slide out......and two little dogs. We were fine but we wanted two things in another fifth........two chairs at the back so we could watch tv easier and walk around bed. We just bought a used 27 foot Crossroad Cruiser with the chairs, chesterfield, and walk around bed. We feel we will be very comfortable in it.
