Personally, I would not except cash from a buyer unless the transaction was to happen at a bank. Might change my mind if I knew I could verify authenticity with 100% accuracy.
Can't a cashier's check be verified from the issuing bank prior to the acceptance of the payment?

Do not deposit the personal check. Take it to the branch listed on the check and get cash tomorrow. Otherwise meet him at his bank Saturday or Monday and get the cashiers check direct from the teller for the FULL amount. Hand him his personal check back. Any delays or nonsense on the buyers part cancels the deal.

Same thing happened to us. We sold the TT to a young family man and he would come and pick it up and paid for it at 7PM. He was working and drove by and saw it for sale. Deal was made for $500.00 under our price. he left and a lady drove by and offered $500.00 more than our price. Deal is a deal but if he doesn't show up by 7:30 it is yours. She called at 7pm but it was gone. I guess the answer is a deal is a deal if both parties are honest. I guess we lost $1000.00

I would go to the buyers bank that the check was drawn on and cash the $500. you need to make sure you actually have the $500. before you start turning down other offers. If the check cashes then you should only make the TT available to the next buyer after Monday if they first buyer does not buy it. I would not give the first buyer an extension past Monday if you have another buyer.

Tell the other interested parties that you have a deposit to hold the trailer and the trailer may be available for sale on Tuesday.
Accept full price only, all parties will realize this is a good deal and won't negotiate.
If you are honorable, you'll make the courtesy call. It also give the first party the opportunity to back out early thus your opportunity to sell it tomorrow.

You agreed to sell the trailer to the first folks on Monday, so either be a man of your word or be a chump.
When we sold our diesel pusher, we had the buyer wire the money to our bank. Once local bank manager confirmed that the the money was in our bank, the coach was his.
The alternative IMO is to have the buyer get a Cashier's Check and then go to HIS bank and cash it. Then, if the Cashier's Check is phoney, it was drawn on his bank account, not yours.

Do you have any written agreement or is this just a verbal agreement?
If this deal is considered a legal contract in your state and you back out of the deal because you want to sell it to someone else there can be problems. If the buyer wants he might be able to file a civil law suit against you for "specific performance". This means he does not want a settlement, money or something else, he wants you to perform as your contract stated. That means selling them that trailer.
This is what samsontdog described. They got the car because the seller broke the contract. The court awarded them the "specific performance" of them getting the item that was for sale.

Be glad you sold it at all...there are plenty of them for sale out there.
Amen on this! We put our camper up for sale, have lowered the price below NADA for less than we owe on it, and no takers! Honor the person's deposit until Monday, for sure.

In Ohio verbal agreements are legally binding. A check changing hands can also constitute a written agreement. I don't know about other states. Also in Ohio, a buyer has 3 days to cancel a deal.
For the seller, a deal is a deal. So long as the other party honors the deal, in my opinion the seller should also honor it. If you were happy with it when you made it, then be happy with it and glad that you had such an easy time selling your trailer.
