You'll have no problem on your preferred route (2 to 7 to 90). There really aren't any mountains in the sense of Colorado. Just east of Wilmington, VT you go over a pretty good sized hill, but that's about it.
We usually go this route when going through Albany. We have a 45' MH and toad.

We were at Niagra Falls on Sat. We came in on I-90 from the other direction. Make sure when you park that you know there is more than one Visitor's Center. We started at the old Blue Visitor's Ctr across the street from The Hard Rock Cafe and the $10 parking lot.
After taking the Elevator up, we could see where everyone was walking from the parking lot towards the River. So we walked back to the parking lot and followed the crowds. The newer Visitor's Ctr has all the information, tickets, etc you'll need.

Try I-91 South at St Johnsbury to Rt 11 West at Sprinbfield. That will take you to Manchester VT. The spectacular Route 7 south will take you to the Bennington by pass and then west to Troy/Albany and the NY Thruway. It's the fastest and least hilly route, and the way we always go.
