RE: Charcoal vs. Propane

The water vapor combines with the smoke, which helps the smokiness penetrate deeper into the meat you're cooking. The humid environment inside the smoker helps keep the meat from drying out. The water pan also catches the drippings from the meat, keeping them off of the heating element, and adding aroma to the evaporating liquid. www.smoker-cooking.com/verticalwatersmokers.html

RE: Charcoal vs. Propane

If you want to WORK, use charcoal or wood. If you want to relax, have a beer and still enjoy tasty smoked meat, use propane! As I get older, I appreciate the creature comforts more. Besides -- after a few beers, can you really tell the difference? OK -- maybe some of you can tell -- but do you REALLY care?

RE: What are States known for?

Ahhhh....another teacher! Welcome to the forum and thank you for your service! Wow! It's about time. 33 years here. Your're welcome. I would have done 35 years except for the infusion of politics and the fact that another two years of my life would have added only $38 per month to my retirement check. I made more than that by being an RV rally vendor for the next eight years.

RE: Spring must be on it's way

Even when there is an even number of Canada Geese and they are flying in their "V" formation, one side of the "V" is always longer than the other! Do you know why?

RE: Why does grilled cheese sandwiches stick in the pan?

Now that someone mentioned it, I have to try mayonnaise! I do remember it being used years ago when I worked in a drugstore that had a grill (& soda fountain!). Maybe I could make my own...oil, egg yolks, lemon juice. Uh, anyone have a recipe?

RE: Why does grilled cheese sandwiches stick in the pan?

One of my many "chores" as a kid was mixing the margarine -- One memory just reminds me of others... taking out the ashes from the coal furnace (and filling the furnace water tray), holding the chicken by its legs and quickly transferring it to a pot of scalding water after Dad chopped off its head (held in place on a stump by two crossed nails), and, who cannot forget the one that got away! (How many of us have watched a headless chicken run around the yard?) bringing in the milk (the benefit of which was licking the cream off the paper top), putting on galoshes to stomp the hulls off the black walnuts (Mom made the best black walnut cake from scratch!), and pumping "Blue" Sunoco for 19.9 cents per gallon.

Olive oil works great also -- just brush it on.

RE: After Retirement Employment

We spent the years between ages 55 and 62 as vendors at local, regional, state and national RV rallies -- Good Sam, Escapees, FMCA, etc. Most years that paid for our winters in a campground in southern Florida. The trick is to have a good product and avoid the rallies that charge outrageous vendors' fees.

RE: winter rv park or spot in Florida next Dec.

Woodsmoke is a nice enough place -- too tight for my 40' diesel pusher, but for $150 to $200 less per month, you can be next door at Cypress Bend RV Resort. I talked to a resident yesterday who told me that there were still some spots open. Note: Cypress Bend RV Resort is not a campground. It is a condo resort with about 400 unit spaces, 90% of which are now park models and mobiles. You will not find it in a directory. Sales and rentals are found on their website or by personal contact.

RE: winter rv park or spot in Florida next Dec.

michelb is correct, but the trick is to find them. Many owners are now setting a minimum term such as three or four, or more months. Finding the place you want for one or two months is getting increasingly difficult. The reason for the minimum? Since units are not selling, owners must meet their expenses within the market time; and many condo associations allow owners to rent only once each calendar year.

RE: winter rv park or spot in Florida next Dec.

I have first-hand knowledge of Imperial Bonita Estates* in Bonita Springs and Cresthaven** in West Palm Beach. Both rent units fully furnished. Both are in the $1000 to $1200 per month range. Both are south of Lake Okeechobee where the really good Florida weather is located; albeit on opposite sides of the state. PM if interested. * This co-op rents out a few hundred RV sites which keep co-op fees low. ** This condo assoc. does not contain RV sites.

RE: How did you get rid of fire ants?

I would treat the ants using the most effective pesticide available -- and either put a chicken wire barrier around the ant hill or physically keep my pets away from that area for the next few days.

RE: Miami Rv Campgrounds

Since the OP addresses this question as a snowbird, my answers reflect that of a longer-staying guest and not someone just passing through. Unless there has been radical change, people staying here for a week are paying the daily rates of between $57 and $62 per day + extra for each kid. And management's attitude toward these temporary guests and the snowbirds who are there for months at a time differ greatly. Money talks. Be nice to the $60+ per day guests. Talk to the snowbirds, not the transients for a true picture of the place. Like your site? Be prepared to be re-assigned the next year if someone else wants that site for one month longer than your stay. You will be bounced. Money talks. During our seven seasons there, we saw the selective enforcement of their rules as rowdy groups partied till 3:00 a.m. during race week, or bus loads of kids entered for the day. The last I heard: They did stop the migrant workers from coming in to do their laundry in the campground machines -- and from swimming in the pool in their underwear while their clothes were drying.

RE: Miami Rv Campgrounds

Larry and Penny Thompson is a popular place. It's not in a neighborhood for walking after dark, but the security inside the park is fine. Sites are in clusters and they built a small pool a few years back. The price is right. They usually have a waiting list. Friends who have stayed at Miami Everglades RV Park recently, including two couples who left because of increased prices and difficulties with management claim that Miami Everglades has not improved. Physically, it's a nice park, but being surrounded by nurseries, people might be bothered by the chemical sprays that are used next door. At least there are no mosquitoes that can invade. The prices are more than a stay here is worth IMO. We wintered here for seven years starting when it was a KOA, expensive then, but at least their clientele felt more appreciated than the almighty dollar. Avoid the gated park in Florida City. We moved to the Fort Myers/Naples area after three young men in the car in front of us decided to test their automatic pistols on US 1. Sure, the traffic is heavy, but at least drivers here stop when the light turns red -- and, you soon learn the lesser-traveled byways.

RE: New Lasagna Question

Bake first; then refrigerate. Refrigerating first requires you to bring the dish to room temperature, or the baking will be uneven -- done on the outside and undercooked in the centre. Foil or a tight cover will keep it from drying out when you reheat.

Sounds like it might be Pepe's on the River.
