RE: What to do in Oregon

The only "theme park" I can think of in the Portland area is either Oaks Park (which you will be disappointed in) or the new waterpark out in McMinnville next to the aviation museum.

RE: Crater Lake Loop Road / Nat'l Park

Best guess in mid-August for the full road to be open. Right now the North and South entrances are open, and you can drive to the lodge, but you can't drive the full Rim Road. Also one campground is still closed and the other is only partly open.
It's been a cool, wet, long spring that has extended into summer - it's also been a very bad yer for mosquitoes.

RE: Mt. St. Helens and Mt. Rainier trip advice

As an FYI, the entire Northwest is coming off a long cool, wet spring, which has persisted right into summer. There is still a lot of snow in the high places, many campgrounds aren't open or are only partly open. Plan for cooler-than-normal summer weather and more rain than we'd normally see in summer (which is usually almost none, but not this year). We also have a bumper crop of mosquitoes this year because of all the wet.
I live about 25 miles south of Crater Lake National Park, and the full Rim Road isn't open yet, most hiking trails are closed due to snow, one campground isn't open and the other is only partly open.
