RE: RVQ 2000 outside grill

Ours uses a bracket like the one posted earlier. I have no idea what model of RVQ we have, but it looks like this when it is put together, but ours is hooked to the trailer propane not a bottle. Does yours look anything like this?

I'm not familiar with the layout in the that model, but as long as the kids and parents have seperate bedrooms (like bunkhouse models) I'm sure it will be fine. Now matter how much a family loves each other it's nice to have a little bit of space that's yours.

We especially like to bake casseroles in the oven when we camp in cold weather. Helps to heat the camper up.
Since we camp mainly in the summer, we rarely use the oven. Heats up the camper. If I need to bake something, I usually use our toaster oven. I can even plug it in outside and avoid the heat in the camper. I guess if we cold weather camped we would use the oven more.

Sorry for the confusion. The recipe listed "American Cheese". I always use some type of cheddar when it calls for "American Cheese".

Luby's Beef Tortilla Soup

I know it's not soup weather, but I had to share this recipe a friend gave me.
Luby’s Beef Tortilla Soup
6 cups Chicken Broth
10 oz. can Rotel
1 1/3 teasp. ground cumin
1 small clove garlic minced
2 teasp. Salt or salt to taste
1 ¼ teasp. Pepper
9 oz. can cream style corn
4 oz. American Cheese, Shredded
¼ cup cornstarch
½ cup cool water
½ lb. – 1 lb. lean ground beef
3 tablesp. White onion, finely chopped
1 pkg. (4 oz.) White Corn Tortillas, cut into 1 x 3 strips
Vegetable Oil
1. Bring Chicken broth to boil in a large pot.
2. In a separate pan, brown ground beef and onion (drain off grease).
3. Add Rotel to broth and bring to boil.
4. Add cumin, garlic, salt, pepper, cream style corn, and cheese. Bring mixture back to a boil and adjust heat so soup is just simmering.
5. Add beef mixture and as many tortilla strips that you like. (I normally add more than it calls for)
6. In a small bowl, dissolve cornstarch in water. Slowly add cornstarch mixture to simmering soup, stirring constantly until you have thickness you like. Allow to simmer 10 minutes.
Make sure to stir your soup so the cheese does not stick to the bottom and burn.

I think I know what you are talking about. Yes, you have to tilt the grill to get the regulator under the bracket. Then the grill should sit correctly. Ours looks something like this except we are hooked to the camper propane and not a bottle.

Last summer we stayed one night at Shady Acres. We thought it was a really nice park. Lots of huge trees (no low branches). Real friendly staff! We would stay there again. Check Rv Park Reviews for more input.

A couple of years ago we were thinking about getting a new RV (later we decided to just waiting until retirement). When we were looking we saw a great floorplan for both families or retirees. It was a 2008 Big Country 3490 BHS. The bunkroom had a bunk that folded up. We thought that if we got it we could still use it when we retire and make a table to go in the place where the folding bunk was. Then if the sons (hopefully independent adults by then) wanted to visit us at one of our snowbirding destinations we could take down the table and fold the bunk back down. I'm really surprised more RV companies are not making multifunctioning bunkrooms. Don't they see that people often want a seperate space for work or crafts?

We had the same problem with our son when we first got our unit. DH bought a grab handle kind of like this one for a grab bar up high by the top bunk. DH also made a wooden cleat (like a triangle sanded real smooth) for a foot hold lower on the wall. He never needed to put up the cleat. Our son tried out the grab bar before he installed the cleat, he said that worked just fine. Wish I had a photo, but our unit is in storage.

Yes, get the bunks and if possible slides in the main living area. All it takes is a rainy camping trip for you to wish everyone had a place to go to.
