I put mine on the pin box of the 5th wheel. When I unhitch the gen stays right there with the 5er.

If one of the exterior storage doors is unlocked you may be able to crawl inside.
If the storage door is locked you can borrow a key from the neighbor as most all of them use the same key.

I will admit that I have a fear of germs.
When I take off the disposable gloves I wash hands thoroughly. When I turn off the water I use my foot to kick it off.
I try to always bring my own water for use inside the RV as I'm afraid to hookup my hose on the spigot at the site. Who knows what germs are on that purported fresh water source.
I could go on and on, but that's stories for another thread.

Just a point. I have mounted on the back of my unit, a steel deck that the generator or generator's would be secured to. The deck is 22" x 24" For that reason I would only have to move the generator very rarely. If the unit needs moving,I have a staff of very strong guys in my business. I just think that a single unit would be less problem to set up each time we camp. We are involved in racing and use the generator both at our Home Track and at Nascar tracks.
Either setup can be great depending on your individual needs.
You might like the 3000 based on the quote above. The biggest drawback to the 3000 is that many struggle to get it in and out of the truck bed. A rack that it rarely moves from would be ideal. The 3000 has a bigger tank and electric start. That beats yanking multiple cords and trying to plumb an external extended tank. It's also less decibels.
My needs are a bit different and I would likely get a set of 2000 units to fit my situation. There is no perfect solution, but both are pretty close.

I have a similar truck. Mine has more payload than I need.
If I needed more payload I would get 19.5" wheels and have a good spring shop beef up my spring pack. It won't change my sticker, but it will make the truck very capable.

I got my 2009 Silverado LTZ 6.0, 3.73 ratio, 2wd, 6 speed about 3 months ago. I see just about everyone here listed 4.10 ratio. I live in eastern Nc and will only go to the mountains once a year at most. I have only pulled my camper once and it did fine (as far as I can tell). TT is 32ft, app. 7000lbs.
What about lite weight 5th wheels. Could it handle those?
Reason for the switch (Toyota Tundra) was payload.
Mine has the 3.73 ratio. I tow near 8000lbs of 5th wheel and have no complaints. (Prior TV was a Duramax so I do have something to compare it to.)
I'm not a drivetrain/transmission/rear end expert, but I have ready many posts indicating the 3.73 is a good choice IF you have the 6 speed tranny. I'm not knowledgeable enough yet on the subject to prove it correct.

The only thing we can't do on our IPad when we travel is transferring our digital pictures from the camera to computer thus freeing up space on the camera card. We just carry more camera memory. So for traveling we only carry our IPads and IPhones now.
There is a camera connection kit for the iPad. It is made to transfer pics from camera to iPad.

I have both. If I could only keep one it would definately be the iPad.
It's not the right answer for some. Your list of uses looks very similar to mine. The iPad is a great fit for what you want to do.
If you happen to have an iphone, like we do, you will love it even more.

My last Curt (2003 Chevy 2500hd) had a 500lb rating. It seemed very heavy duty and I don't doubt that it would have carried its rated load well. I only used it for bicycles so I can't be certain.
In addition to the receiver rating, ensure that you have enough front axle/tire capacity and don't block too much airflow to the grill of the truck.
