RE: Calling all cooks -- I need your help

I catered for 72 people @ a wedding dinner. I served taco salad. I precooked the tortilla bowls and served both chicken and ground beef. Add the topping and some side dishes and a few drinks. Chefd

RE: Organ Pipe NM

I have to agree with Lauren!!!!!!!!!!!!! With all the places to go and hike Organ Pipe is my NEVER choice. Way too many Ugly things going on in that part of the desert. I personally know several Border Agents and local law officers. Not the place for a tourist. Sorry to spread bad news but that is the way it is. I know the Govt is saying the border is safer that it has ever been. Sorry but they are wrong. I do however love the park. Maybe someday we can get the desert safe for us again. Chefd

RE: broth

I have to agree. Too much sodium! Also it makes 3 1/2 cups, kind of a odd amount. I have been buying stock @ Costco for some time. Works out to a little over a dollar a quart. I think I like that better. Lower sodium and better size. The Knor flavor is fine just the other negs. Chefd

RE: Grand Canyon Help

The campgrounds @ the north rim do not have hook ups. There are a couple outside: one I can think of is @ Jacobs Lake. About 40+ miles. Depending on you RV the park campground can handle most anything. Be sure to make you reservations early. Chefd

RE: New Penzey's Codes!

I have signed up for the Penzey's catalog. I get the coupons with each issued and then I just go to the store and get the freebe. The only problem is I always spend more money. Great Stuff!!!!!!!!!!!!! Chefd

RE: Prescott to Southern California

I don't know what you have for an RV but hwy 89 south to wickenburg can be a little tough. Yarnell hill is a very long down. Most of the White Spar Mtns. are 40 feet or less in length. Having said that I10 is better than I40 and I would stop in Desert Hot Springs. Enjoy the mineral pools and spas. Then southwest to Temecula and the wine country. After laying in you wine supply head south on I 15 to San Diego. We usually stay @ Mission Bay but they have a 30 day limit. There are several parks and the winter prices are much lower that the summer. Enjoy the trip. Chefd

RE: US 180 - Flagstaff to Valle, AZ

Just a thought: You may want to check with Snow Bowl and maybe they will have the ski lift running. This is the highest peak in AZ. 180 is a great road. Just watch for deer and elk! I would suggest at least 2 days @ the canyon 3 is better. You must hike down some. This will give you a feel for how big this place is. Have a great trip and enjoy MY canyon! Chefd

RE: US 180 - Flagstaff to Valle, AZ

Check the weather. The road is easy to drive no big pulls or drops. The tree line is close to the road. Travel during the mid part of the day. Lots of deer and elk. 180 connects with 64 right @ Valle. You can't miss it because you have to stop. There is an aviation museum there that is kind of interesting. They have a baby connie that was the command aircraft for General Mac during Korea. Chefd

RE: Best Tips for Keeping the RV smelling fresh???

Sorry folks. As a chef there is nothing better than great food cooking and the smells it gives off. Just keep cooking with love and all will be fine. Chefd

RE: Ever tried food concessions as an income?

I have been in the concession business with my son 18 years. We have done it all. Hot dogs including Home Depot, snow cones, corn on the cobb, turkey legs, nachos, drinks, and so on. This is a very hard business!!!!!!!!!! My advice is take a very long look before you invest your money. Chefd

RE: I-29 from Kansas City,Mo area up to Omaha,Ne

I was there a couple weeks ago. Most of I29 was closed because of the flood. Check US59 to I80 and then west into Omaha. Chefd

RE: Insurance for my RV.

If my agent told me I was covered and then we find out I am not. The next phone call would be to the state dept. of insurance. I spent 31 years as an agent. If I say you are covered you are. I may be in trouble with the company after but you are covered. When looking for coverage on your trailer be sure the agent knows what an rv is. Cover your trailer on you auto and your contents will be covered by your homeowners assuming you have a stick house. Chefd
