I have seen several recommendations to go to a CAT Scale to check vehicle weights/trailer weights, hitch weights, etc.
Tow questions:
1) where do I find such a scale (not even sure what to google)
2) is there a checklist of what I need to weigh and how?

There are a number of options: truck stops, sand and gravel yards, landfills, etc. Truck stops would probably be the most convenient. I took mine in twice, once with the TV and TT totally empty and later with both fully loaded for a trip, the most important one.
I pull on the scale with the TV front axle on the forward scale, the rear axle on the second scale and the TT axle on the third. They take the weight immediately and I go in and pay $8.00 for the weight. Then I go back out and unhitch and reweigh the TV alone with the axles on separate scales again. That costs another buck for a reweigh. With those two weights I can calculate everything I need.
My TT is single axle and light enough I don’t need WD or sway control. I’ll leave the process for those weights to the people who have them. There’s an intercom on the scale so you can talk to the person weighing but they’re designed for semi’s so it may be a stretch to reach it.

well you could.. the other option I would assume would work all the same is to weight the truck empty first.. Then when it's hitched simple math will provide you with the hitch weight (empty combined truck axle weight minus loaded combined truck axle weight). You're going to want to weigh it empty anyhow so just drop it once..

I guess I'm lucky living in rural America, we have scales all over the place that are only open a few hours every day. I just go out there and weight when ever I am in the need to know. state scales are free. I will add this, state scales are always closed on state holidays. the scale is always on, they never turn them off.

Another option is the highway truck weigh stations, when they are not manned.
Most every state/county weigh station is left on when not manned.

When someone tells you to buy the same rig they own, listen, they might be right. When they tell you to buy a different rig then they own, really pay attention, they probably know something you don't.

We have a local recycler with a truck scale. When I purchased my toad and wanted it weighed they didn't even charge me since I did not request a written or certified weight.

Weight scales can are at:
1. Major Truck Stops.
2. Most Co-ops.
3. Most large grain companies.
4. Most major moving companies.
5. Most rock quarries.
