Tried bbq-ing salmon using the wood plank thing...as I had no earthly idea how to tell when it's ready, ended up with a burned mess that got tossed in the trash
1.) Can salmon be done successfully on a charcoal bbq?
2.) How do I tell when it's done? with beef, you just cook 'til the red is gone inside

We Bar B Que salmon all the time on the grill. We used to use those aluminum throw away trays with all the holes from Walmart. Can't find those anymore. We now use the flat metal tray that has all the holes in it. Home Depot has them I think. The one we have is stainless. That keeps the salmon from falling through the grills. We dip in lemon juice, then add salt and pepper. Rub oil on the metal tray and throw on the salmon. I like to keep the grill at approx 450 degrees and watch it closely. About 5 or 6 minutes a side works for us.

One of the best methods I have found for cooking fish is take a large piece of aluminum foil, place the fish in the middle of it, add a slice of lemon and a pat of butter. Wrap it up tight and place it on the grill for about 6-7 minutes.

Of _course_ you can cook salmon on the grill. I plank em all the time.
Soak plank
Season fish
Put fish on plank skin side down (some folks remove the skin, I don't)
Stick on the grill, indirect heat (must be covered, of course), for about 20 min.
It's done when it flakes with a fork - salmon doesn't need to be well-done, just cooked. (I do mine a bit underdone)
Serve on the plank. Toss the plank in the fire when done.

If you burnt a planked salmon you either left it on waaaay too long, or had it on direct heat (typically catches the plank on fire), or had waaaaaay too much heat in the grill. Planking works great at medium-high indirect heat.
I've just grilled salmon before too, skin side to the grill, indirect heat.
I've wrapped the fillets in foil and tossed them on direct heat. Flippem once or twice, cook about 10 min an inch of thickness.

The fish will get flaky, easy to break apart, when cooked. Time will depend on thickness, but I usually cook the fish about the same time length as I would a similarly thick other piece of meat.
I like to cook Tilapia. I'll brine the fish in salty water for about 20 minutes, then rinse. I mix wood chips, 2/3 hickory and 1/3 apple wood, soak the chips 20 minutes or half hour while the charcoal gets going, then drain and throw the chips on the hot coals right before adding the fish (on aluminum foil coated with cooking spray). Very nice smoky flavor with a bit of saltiness.

what do you mean by 'indirect heat', when cooking on a bbq grill?

Take your salmon, put it skin-down on a piece of foil, spread a think layer of lemon yogurt on top of the fish, sprinkle it with some fancy pepper, wrap it up and put it on a hot BBQ for 5-8 minutes per side (depending on thickness). It will be moist & tasty!!!

Soak the plank in warm water, two hours
I cook mine over the burners on the grill, grill on medium-low. You can use charcoal, low heat. I have a spray bottle of water to douse the flames when the plank catches on fire.
Many recipes for what seasonings and oil to put on the fish.
Cook for about 20 minutes. It is done enough when it will flake with a fork.
