Glad to hear your hubby's doing well!

I didn't realize you were looking for low-carb suggestions-

Have you tried shirataki noodles?
They're actually made from the root of an Asian plant and contain almost zero carbs. They've been used for years in Japan for weight-loss dieters that still want to eat noodles, and they're becoming a lot better known here due to so many noodle-hungry folks on low-carb diets.
A stir-fry with your pork, juices, vegetables and these noodles would be delicious!

The ones I use come from the Asian market, and they're refrigerated in water, not dry.
I recommend dipping them in boiling water to rinse away the slight tang of the ascorbic acid (vitamin C) added for preservation of the color.
Then just toss them into the pan with everything else!

It's getting so you can find shirataki noodles in regular grocery stores, but they're much more expensive there than in Asian markets if you have one in your area
Do TAKE CARE that you're getting the ones made only from the root- there are some out there that have soy added and they have more carbs in them.

made fajitas out of some just the other day.. cut slices into strips, heated in skillet, added fajita spices (I mix my own combi of chili powder, garlic, cumin, etc) and frozen peppers and onions.. I ate with chips and salsa, since I realized as I went to serve that I had no tortillas..
