Suzanne Somers has a low/no carb cookbook. She uses lots and lots of veggies and MOST of the recipes that we tried were very, very good.

This diet is awesome. It is easier to do than Atkins to me. And on 2 days a week you can eat what, and as much as you want.
The first week is the worst and this is where you have to be strong to get your body where it needs to be. I have to have my veggies.

4 HOUR BODY

Even if you don't stick to it, check out the recipes. They are good for low carb ideas.

After two lifetimes of trying to diet, dw and I have a solution. The MediWeight Loss Clinic. It is low carb, low fat, high protein, basically no food. 500-700 cal in protein for wife - 1000-1400 in protein for me a day, 30 carbs a day. First two months adherence is verified by daily ketosis stick test for cheating. After 20 weeks wife has lost 52 pounds and I have lost 30 ( I don't stick to it quite as well as she does - she is the one going to clinic) The only primary food group outside of protein is shredded angel hair cabbage which we use as substitute for rice, pasta, potatoes, etc. Exercise is recommended but wife is handicap challenged and has lost w/o exercise to this point. Works kind of like stomach stapling as you shrink stomach size but restriction is on fork instead of in your belly.

LowCarbfriends.com has a lot of great recipes,I use the site all the time,I go mostly for the recipes that have good ratings. Here is one of my favorite recipes from there,if no meaty ham bone you can also use smoked sausage,it makes a lot and freezes well:


Ham-Eggplant Gumbo




INGREDIENTS:

1 meaty ham bone (Mine yielded 12 oz. meat. If yours yields less/more meat, you’ll have to adjust info below)

1 14.5 oz. can diced or crushed tomatoes, low sodium

2 c. chopped celery

2 oz. chopped onion

2 oz. red bell pepper, chopped

2 oz. green bell pepper, chopped

5 oz. frozen cut okra

3 c. chicken broth

1½ c. peeled eggplant, diced

¼ tsp. Tobasco (about 12 drops)

Dash cayenne pepper and black papper

4 cloves minced garlic

DIRECTIONS: Place ham bone in large soup pot. Dice celery, bell peppers, onion and eggplant and add around ham bone. Pour in tomatoes and chicken broth. Add last three ingredients and bring to boil. Then lower to lowest setting and simmer 1 hour. Stir every 20 minutes. Remove ham bone to cutting board and let cool a bit. Then cut off and dice all usable lean meat and add to soup, stir and serve. Lovely with a nice green salad.

NUTRITIONAL INFO: Serves 8 one-cup servings, each contains:

111 calories

Here is another from the lowcarbfriends.com website-delish!

1 tablespoon Butter
4 pork chops -- (4 to 6),
bone in
Garlic Salt
Black Pepper
1 Jar Classico low carb Alfredo Sauce --
8 ounces button
mushrooms -- whole
1 Pinch Dried Thyme

I serve this with Dreamfield low carb angel hair pasta





How To Prepare:

Melt butter in large skillet.
Season chops on both
sides with garlic salt and
pepper, and brown in butter.
Transfer chops to slow
cooker. Remove skillet from
heat and stir alfredo sauce
into drippings. Slice
mushrooms and scatter
over chops in slow cooker.
Pour alfredo sauce over all.
Sprinkle with dried thyme.
Simmer on medium low
heat about two hours or
until chops are fork tender.
NOTES : Counts for Alfredo
sauce and garlic salt not
included in totals.

While I've read Atkins Cookbook, I'm more of a 'basics' cook/eater. I do things like pork chops in Cream of Mushroom Soup, Beef Stew (with more green veggies than potatoes), fish - baked, broiled, fried. And Chicken....

I do avoid bread, white flour products, pasta, rice, corn, carrots, limas (that kills me). I splurge on Green Beans, spinich, kale, etc. To jazz them up a bit, I sprinkle with lemon pepper dressing.

Try this for an easy and fast breakfast. Go to WalMart and buy a package of frozen precooked Spicey Pork Sausage Patties (found by the breakfast items). Put one in a frying pan and reheat, then place a slice of american cheese on top of pattie and cover until the cheese is melted.

Meanwhile crack an egg and scramble it in a small bowl and then pour into a oil sprayed microwave egg poacher. Microwave on high for 60 seconds and then place on top of the sausage pattie and melted cheese. Mmmmmmmmmm Gooooood! AND easy.

Even easier than above......scramble egg in the microwave egg cooker. Cook 30 seconds, add sausage patty, zap another 20 seconds, add cheese, zap another 10 seconds. One pot cooking, easy and good.

Buy a good low carb cook book. I would recommend the ones written by Dana Carpender. She also has a website holdthetoast.com. You will be amazed at the things you can make including low carb treats that will keep you on your plan. Many of the items in her recipes can be found at your local grocery or Walmart. I personally prefer her "500 More Low Carb Recipes" but all her cookbooks are good.

Cut sausage into small pieces and brown in the bottom of a stewing pot. Once done, add chicken broth and spinach. Cook for 10 minutes. Ladle into bowls and top with a couple spoonfuls of parmesean cheese. YUMMY!

We also like to serve ours with PARMESEAN CRISPS (take shredded parmesean cheese and put a spoonful onto a greased cookie sheet) leave plenty of "spreading" room for them. Put about 6 on a sheet. Place in a 350 oven until they are golden brown. Adds some "crispness" like crackers.

Just made another pot of this. It is GREAT!! I've made several pots with bratwurst, boudin, or hot italian sausage, and with both fresh and frozen spinach. It's always good. The best way is four 14 oz cans of broth (56 oz), a 12 oz bag of frozen spinach and a pound of hot Italian sausage.
