My wife and I are in week 3 and starting to run out of ideas. My life has been built around carbs so I'm about up to my eyeballs in eating salad. Got any entrees you've made up or recipes you really like?

Atkins Chili Ingredients

• 1 Tablespoon olive oil
• 1 large chopped onion
• 6 large garlic cloves, minced
• 2 medium jalapenos, minced
• 2 lbs ground sirloin
• 2-4 Tablespoons chili powder (adjust according to personal taste)
• 1/2 teaspoon salt
• pepper to taste
• 1 16oz can diced tomatoes (make sure no sugar added)
• 2 cups chicken broth (again no sugar added)

When I was on the Adkins diet, I avoided bread, pasta, potatoes,and anything else that was high in carbs. You can usually eat as much protein as you want but it is a little harder to match that up with complementary foods.
I lost thirty pounds on the Adkins diet over a six month period and kept most of it off. Once you get past the first couple of weeks, it gets easier, at least it did for me. What I had to do was get a good calorie/carb chart and basically look up what foods had the least carbs and make a meal based on what I found. Adkin's has or at least had, a pretty good chart on it's website. Good luck.

This sounds kinda weird and not really appetizing, but it is WONDERFUL!


Spinach/Sausage Soup

1 lb HOT Italian Sausage (you can always use regular, but the hot adds just enough zing)
1 10 oz frozen, chopped frozen spinach
1 48 oz can chicken broth
1/4 cup parmesean cheese


Cut sausage into small pieces and brown in the bottom of a stewing pot. Once done, add chicken broth and spinach. Cook for 10 minutes. Ladle into bowls and top with a couple spoonfuls of parmesean cheese. YUMMY!

We also like to serve ours with PARMESEAN CRISPS (take shredded parmesean cheese and put a spoonful onto a greased cookie sheet) leave plenty of "spreading" room for them. Put about 6 on a sheet. Place in a 350 oven until they are golden brown. Adds some "crispness" like crackers.

This is one I invented last week and just loved. It packs a kick too.

Grilled meat of choice – steak, chicken, kielbasa…
2 stalks of celery, diagonally sliced
Handful of asparagus spear
2 cups broccoli flowerets
1 med. Onion wedge sliced
1 orange, red or green pepper sliced
2 zuch. Sliced
8 oz. sliced mushrooms
1 can tomato sauce – garlic & herb
1 Tbsp. garlic pepper sauce
1 tsp. Cajun seasoning
1 tsp. minced garlic
2 Tbsp. butter
2 Tbsp. olive oil

Sautee the garlic in the butter & oil. Add broccoli and cover for 5 minutes stirring occasionally. Then add the rest of your soft veggies. May want to add a couple Tbsp. of water to help steam if it looks too dry. Cover and cook 3 more minutes. Now add the sauce and the remainder of the seasonings. Cover and cook until bubbling and everything is heated through. Spoon saucy vegetables into a shallow soup/salad bowl and top with a portion of your grilled meat. This turns out like a tomato based stir fry and has really good heat. The garlic pepper sauce is found in the Asian isle and really packs a wallop. Use small amounts to ratchet your heat up or down from the base.

To even try to stay on an Atkins regimen more than a few months is really hard. There are a lot of low GI products, including Atkins brand that help but get out your wallet. Netrition.com has a good selection. I would keep Atkins milkshakes and breakfast-snack bars around. There are some low carb pastas you can eat small amounts of but it makes a lot of difference. CarbQuik (sp?) flour lets you umake small pizzas, even biscuits. Sausage gravy with one low carb biscuit and a poaced egg and a tomato is not an un-tasty breakfast. I have always eventually put back on any weight I have lost on Atkins and have come to believe that Weight Watchers, a scale, a full length mirror and a bicycle is the only way.

Not Atkins, but Dukan, which is similar but lower in fat.
I made a lasagna but left out the pasta. I'm in the meat only phase, so no eggplant or zucchini as "noodles"
Layer very lean cooked ground beef sautéed in tomato sauce with Italian seasonings, with layers of fat free ricotta mixed with egg whites and fat free mozzarella.
Mix up some remaining tomato sauce and a few egg whites and pour on top and shake so it sinks down through layers. Bake at 350 til ricotta is set.

I also made healthier sausage gravy that I put in an egg white omelet. No flames please, I know how to make the real deal which is probably what got me in this shape to begin with!
Take one tube jimmy dean lite bkfst sausage and brown with extra lean ground beef, same amount. (I grind my own completely defatted eye of the round)
When cooked, add I can healthy cream of mushroom soup, undiluted, and garlic powder, onion powder, black pepper, cayenne, sage, thyme, and poultry seasonings. Add a splash of skim and stir til creamy.
Place a third cup or so on an egg white omlet with a handful of fat free cheddar and some hot sauce.
A pretty good alternative when you're watching calories but just want that flavor.

Also see my recipe this week for pizza soup. On my bowl, I did not use bread. I took a handful of fat free mozzarella on a Pam- sprayed plate, added 3 pcs of turkey pepperoni on top, and microwaved til crisp. Used that as my crouton.
