juliev, I don't see how you can do all that work for long. While exercise is good, back breaking work does just that, it will break you down.
As far as breakfast, Leo Benson seems to have experience, and I agree, breakfast can be most anything. Lots of ready made frozen possibilities. Good luck.

They do have frozen biscuits when you can find them and some pretty decent gravey packets and oanned. You can always use english muffins. Don't know what your allounce is but the gravey and biscuits are not cheap.

There are several recipes for Baked French Toast, which you make up the day before and keep overnight in the fridge. Here's Paula Deen's recipe, which is delicious and easy.

For ourselves, I cook a whole pkg of steel cut oatmeal. Use a little more liquid (apple juice or water) and the last 5-10 minutes, I add raisins and/or chopped dried fruit. When cool, refrigerate in plastic container. Dish up enough for breakfast & reheat in microwave, add half/half & cinnamon. Fast & easy for your preparation.

Or: Overnight Pancakes
Whisk 2 eggs with 2 cups buttermilk. Mix 2 cups all purpose flour with 1 tsp. baking powder & 1/2 tsp. salt. Add to egg mixture. Cover with dishtowel & leave on the counter overnight. Next day, mix 1 Tblsp. hot water with 1 tsp. baking soda. Add to batter along with 2 Tblsp. cooking oil or melted butter. Spread spoonfuls of batter on preheated grill & use back of spoon to spread out so they are thinner. Can double recipe & freeze extra to reheat in microwave.

If you have a Sam's Club near you, check for this: My local Sam's has packages of 24 pre-baked, fresh Pillbury biscuits that are really good. I heat one or two up in the microwave, and store the rest in the fridge. They're good for a week or more. Sam's also sells pre-made sausage gravy in #10 cans. Can be heated on the stove or in microwave. I scoop the gravy into Ball jars and store in the fridge or freezer.
You can do a large baking sheet of bacon in the oven. Line the baking sheet with foil for easy cleanup, add bacon strips in a single layer, put in a cold oven, set the temp to 400 degrees for about 20 minutes, drain on paper towels. Once its cooked, you can store in a bag in the fridge and heat what you need in the microwave in seconds.
It doesn't take any longer to prep these items for a few days than it does for a single meal.

A misunderstanding appears to have arisen due to a misperception of the purpose of pancakes.
It's true that if taken alone they must be consumed very shortly after cooking.

Tasteless globs of cooked flour are even less palatable when reheated.

But since most of us understand pancakes to serve ONLY as a vehicle to Get Toppings From Our Plates to Our mouths, reheated pancakes certainly serve the purpose as efficiently as freshly concocted ones.
