I grew up on Kentucky Wonder green beans that had been cooked all day long, usually with a strip or two of bacon. I still prefer my green beans quite done. Asparagus and Brussels Sprouts I now prefer roasted with a squirt of evoo and some sea salt, perhaps some garlic powder. Cabbage I want with a small amount of "bite" to it and spinach I like best sauteed with evoo and garlic with a splash of lemon juice just until wilted. Squash and zucchini for me are best sauteed lightly with onion and some mushrooms. Carrots need to be cooked until tender, and yes, the baked potato must NOT be hard in the middle! Broccoli and cauliflower I can have steamed or more likely now, microwaved in the bag for 3 minutes then dressed with some Italian dressing mixed with a small amount of Parmigiana and olive oil.


Both retired. Travel with Nicky the Schnoodle. Son graduated and is teaching high school math. We still love our 2006 34' Allegro Bay XB and have 40,000+ miles on her.

We love the steamfresh veggies. Microwave them for 5 mins, perfect veggies every time. My kids will even pull a bag out of the freezer for snacks. Won't eat brussel spots, broccoli or cauliflower yuck.

When I am cutting up potatos for potato salad, I usually eat some to the peices raw. I love raw potatos.

Broccoli, that is cooked to a Mushy State loses a lot of it's Nutrients. If you notice, it also looses a lot of it's Green Color.

It is also much easier to digest.

Some time ago I read that the harder the stomach has to work digesting something, the more calories it uses to do it. Since then I have taken to eating crisper veggies and fruits, etc. Supposedly drinking cold liquids makes the body use more calories to maintain body core temperature. Hey, any calories I can use up away from the treadmill without effort on my part is a good thing.

I steam or grill my veggies so they're just tender - hate 'em mushy, except for potatoes, of course.

I'm from the East Coast ... lived in CA for 15 years ... and I LOVE raw veggies. Maybe NOT brussel sprouts raw ... but I do love them and broccoli et al steamed and crispy/crunchy.

p.s. Grew up with CANNED .... yuck ... veggies. Probably why I went so far in the raw direction.
