We have made numerous trips across this great country, and are heading out again just before the holidays.
My recommendation, and the route we will go out to Salt Lake through Denver:

I-10 to Mobile, short stretch on I-65N to US-98W.
US-98W to Jackson, MS. Get on I-20W.
I-20W to Fort Worth. Get on US-287N.
US-287N to Amarillo, short stretch on I-40 to a bypass around Amarillo. (It may be called 287 North Bypass, or some such.)
US-287N again,to US-87N at Dumas, TX.
US-87N to I-25N to Denver.

This is a fairly short and southern route. Only really big city is Fort Worth, and I have never had any problems there.
Of course, anything can happen weatherwise on the the plains.

Take a look at a map, and PM me if you want any campground recommendations.

Ditto! Amarillo Information Center rest stop is Great! 24 hour security. Free WiFi.

We travel the US287 route from the DFW area twice a year. We avoid Dumas all together due to massive overpass construction just west of town on US87 and the RR tracks.

There are two ways you can avoid Dumas. First, if you elect to go north out of Amarillo on US287 toward Dumas, turn west on TX Hwy 354, which is about 12 miles south of Dumas. Take this road to US385 at Channing then north on US385 to Dalhart and back on US87.

Second choice is to stay on I-40 until about five west of Amarillo, then north on Loop 335 for about five miles then NW on TX FM1061.
NW on 1061 to US385, then north to Dalhart.

Yet another option is to stay on I-40 thru Amarillo out to Vega (34 miles from AMA) then turn north on US385. This is only about five miles further,

These are all good roads and we've tried them all. FM1061 NW of Amarillo has a few rolling hills for about five or six miles, then it levels out. No traffic including trucks to speak of.

Now enjoying mother earth at ground level and one mile per minute.
