The pineapple cream cheese sounds interesting but I've only got strawberry on hand......

I've made them using Hot PepperJack Cheese wrapped in Bacon.

Wright Dairy near Anniston, Al. makes a very hot PepperJack Cheese they call 'Desert Storm'... Expensive,but tasty.
It's fantastic in Jalapenos or melted on a cubed steak sandwich.

2 things are likely to happen. The peppers will infuse the 7-Up which will likely release the little bit of heat left in the shell of the pepper. (Most all the heat is in the seeds and inner membrane) And secondly, the pepper may be brined in the 7 Up giving it a little sweetness.

That's a great recipe, and I've had it; it's very good. Another version is the bacon-wrapped peperoncinis; just wrap them with bacon and fry/roast/bbq up! Very Tasty!

I make these all the time in the summer. We call them armadillo eggs. I stuff mine with fresh grated pepperjack and chopped cilantro. Wrapped with bacon and cooked on the grill. Emmmm good!

We put cream cheese and a little grated sharp cheddar in ours,I love them but dh isn't as big a fan so I count on our dd making these when we go visit her.
