Sometime ago, maybe a long time ago, there was a recipe on this site for breakfast cooked overnight in a crockpot. We printed the recipe but now can't find it. I've tried a search in this forum but turned up nothing. If anyone has the recipe please repost it. We are helping feed a small group breakfast in two weeks and thought that it would be good.

From Sportsman 2505qss:

32 oz bag of frozen southern style hashbrown potatoes
1 lb of bacon cut into pices, fried and drained
1/2 cup dieced onions
3/4 lb cheddar cheese diced
1 dozen eggs
1 cup milk
1/2 tsp dry mustard
salt & pepper

Layer the frozen potatoes, bacon, onions, and cheese in the crockpot in two or three layers. Finish up with cheese. Beat the eggs, milk and mustard, salt & pepper together. Pour over the whole mixture. Cook on low for ten to twelve hours.

Here's an easy breakfast casserole. Don't forget to use the Reynolds crock pot liners for easy clean-up!

Crock Pot Morning Casserole

1 bag (32. Oz.) Frozen hash brown potatoes
1 lb. Of bacon diced, cooked and drained or 1 lb. or cooked cubed ham
1 medium diced onion
1 green bell pepper diced
1 ½ cup shredded cheddar or Monterey Jack cheese
1 dozen eggs
1 cup milk
1 tsp. salt
1 tsp. pepper

Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon (or ham). Then a layer of onions, green peppers and cheese. Repeat the layering process two or three more times ending with a layer of cheese.

Beat the eggs, milk, salt and pepper together. Pour over the Crock-pot mixture, cover and turn on low. Cook for 10 –12 hours.

Personally, when I have made this recipe I have used Simply Potatoes Hash browns and fried them up a bit first. You can play with this recipe and use different breakfast meats and or cheeses. Pepper jack cheese is a good one!

Google crock pot breakfast recipes. We do them all the time at football games. We cut the eggs in half and use Eggbeaters and lower fat cheese. There are all kinds of possibilities. You can do chunked potatoes or hash browns, vary your meats, add spinach, with or without peppers. Best thing is its ready when you get up and if you use the crockpot liners, easy cleanup.
