Aunt Roxie’s Squash Casserole 2 1/2 Lbs. Yellow Squash Diced 1/4 Cup Margarine 1 Medium Size Onion Diced 1 1/4 Cups Water 1 8oz Package cream cheese Simmer first 4 items above until tender in cast iron skillet. Then melt 1-8oz Package cream cheese add salt and pepper to taste. To the above mixture. Grease baking dish and pour mixture into dish. Melt 1/4 cup butter and mix with 1 cup salted cracker crumbs and Sprinkle over top of casserole. Bake at 350 degrees for about 35 minuets or until brown.
