I have used a West Bend Slow Cooker for years in the RV, and a Crock Pot at home, for just as long.
I have tried watching them, and attending to them as they cook, but they are pretty boring! Especially the first hour or so while they are getting up to heat. Just about as exciting as watching World Cup Soccer, grass grow, or paint dry!
So, now I just let them do their thing!

Before I went camping I cooked and shredded a pork shoulder at home. I then froze it in a zip lock bag when it cooled. When I got to the campsite I warmed up some bbq sauce and then added the frozen and shredded pork with some liquid smoke in my crock pot and left it alone (I stirred it a few times when I would come in for a liquid refreshment) and that night we had the best pulled pork sandwiches we have ever had. Bonus to this is a pork shoulder will make enough to do this twice.

I am a bit worried about your dog than the Crockpot. I am sure that nothing will go wrong with the Crockpot. We have used it ample times and it has always been safe. Happy Camping!

Pulled pork comes out excellent in the crock pot (see link for details). It is also a truly one-dish meal, no prep dishes or anything. We love it for when we're trying to conserve water.

Doggy is used to it. We leave him with a good chewy bone, water and keep it cool, he's a happy old dog. There's no way he can get to the counter, heck, he even needs help getting in the trailer!
