I tried both of these for dinner tonight and we really liked both recipes. The catfish is from the July Southern Living and the Ice Cream recipe is in our paper today.


Crispy Oven Fried Catfish

1 cup low-fat buttermilk
4 (6-oz.) catfish fillets
1 1/2 to 2 tsp. Creole seasoning ( They tested with Tony Chachere's as did I.)
3 cups cornflakes cereal, crushed
Vegetable cooking spray
Lemon wedges
* optional: few drops of your favorite hot sauce in the buttermilk

Place buttermilk in a large zip-top plastic freezer bag; add catfish, turning to coat. Seal and chill 20 minutes, turning once.

Preheat oven to 425.

Remove fish from buttermilk, discarding buttermilk. Sprinkle fish with Creole seasoning.

Place crushed cornflakes in a shallow dish.

Dredge fish in cornflakes, pressing cornflakes gently onto each fillet.

Place fish on a wire rack coated with cooking spray in a roasting pan (I used a cookie sheet).

Bake at 425 for 30 to 35 minutes or until fish flakes with a fork. Serve immediately with lemon wedges.


Lemon Buttermilk Ice Cream

2 cups superfine sugar (see note) I subbed with Splenda.
2 teaspoons lemon zest
1/2 cup fresh lemon juice
1 qt. low-fat buttermilk
1/8 teaspoon salt ( coarse salt, such as kosher salt, preferred)

Combine sugar or Splenda, lemon zest and lemon juice, mixing well. Stir in buttermilk, and salt, stirring until sugar dissolves.

Chill at least 4 hrs. ( I only did this for 1 hr. and it was fine). Freeze in an ice cream maker according to manufacturer's directions.

Note: To make superfine sugar, process granulated sugar in food processor with metal blade for 2 minutes, a blender would probably work too.

I made this in my Cuisinart Ice Cream Maker so I halved the recipe so it would be sure to fit in the bowl. It was more creamy than other low fat ice creams I have made and the flavor was great.

Sounds good enough to try. I'd try the ice cream but we don't have a freezer anymore. Am trying to locate a used one. They want rediculious prices for the new ones. I can buy a lot of Blue Bell for the price of a new one!

Thanks for the lemon buttermilk ice cream. I plan to try it tomorrow.

We eat a very low fat/sugar free/refined foods free diet, and we are expecting guests. We generally eat fruit for dessert, but I have been looking for ideas for something to serve guests that we would eat as well. This may fill the bill.
