Personally, I think this should be titled “You Won’t be Married for Long” Vodka Cream Pasta! NOT very good at all, in my opinion! However, a lot of folks obviously love it, I’m just not one of them, and neither was my family!

Quote:

1 Tbsp. extra-virgin olive oil
1 Tbsp. butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can crushed tomatoes (32 ounces)
Coarse salt and pepper
16 ounces pasta, such as penne rigate
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn
Crusty bread, for passing

Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Add vodka to the pan, Reduce vodka by half, this will take 2 or 3 minutes. Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.

While sauce simmers, cook pasta in salted boiling water until cooked to al dente. While pasta cooks, prepare your salad or other side dishes.

Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves. Pass pasta with crusty bread.

Of course, it looks fabulous in the picture! LOL

Why would you bother to send out a recipe that you didn't like, and TELL EVERYONE IT WAS BAD?

As a word of caution, Always pull the pan off the fire when adding liquors to a hot pan. Wine is okay but be careful of high alcohol liquors.

I posted it because it's had so many GREAT reviews. Everyone has different tastes, and what's good to some is awful to others. Obviously, a lot of people liked it, based on all the reviews on Food Network. According to Rachael Ray, when she demo'd (sp?) this dish on Oprah, the servers actually crashed from so many folks wanting the recipe!

So, just because me and my family thought it was awful, others will probably like it.

I've had vodka cream sauce on pasta in several formats... Jar, scratch made, frozen.... none of them really made me jump for joy either.

Maybe I'm just a simple guy. I like a simple meat sauce made with sausage, tomatoes, basil, bell pepper, garlic, onions, oregano, and maybe a pinch of red pepper flakes.

Thinking about why I posted this some more . . .

It's quite possible that many of you folks have this recipe in your personal cookbooks. You may not have it listed with this very name, but you know it's a Rachael Ray recipe . . . by my posting the recipe, along with my review, you may go back and see if it's the same recipe so you can pull it and throw it away.

Not everything everyone makes is fabulous, and I think it's helpful to know those dishes that not everyone liked.

I would not pull that recipe and throw it away just because someone else didn't like it. I would have to try it myself first. This is rather confusing to post something you didn't like along with a picture.????????
