I use a little bit of them all to add a festive color to salads and food.
One favorite thing i make camping is to make foil packets of polish sausage, onion wedges, different colors of peppers and mushroom buttons and put it over the coals to slow cook. You don't want the foil packets so full they can't cook through without burning the outside of the food.
The flavors blend and it's soooo good... ok, now i am ready for the fall so we can have the campfire food again, lol.
I do this too-interesting how our tastes change. I wouldn't touch peppers when I lived with my parents, I absolutely love them as an adult!

The green ones are tangy while the red and orange ones are sweet.
That is the reason that it is advised to use all three in a salad. The addition of Green ones will limit the sweetness of a salad.

The long green peppers found in most grocery stores are a great addition to almost any meal. I put them on the grill, let them scorch up a bit, then wrap them in paper towels for a few minutes and the skin will easily peel off. Drench them in a good olive oil and serve with steaks, chicken, almost anything! I usually cut them open and discard the seeds, they are sometimes a little bitter. I love putting them on sandwiches with any kind of sausage, particularly linguica. Even goes good with eggs and sausage breakfast.
They are usually not hot but sometimes will surprise you a bit.

Not all peppers start out green. But those that do will turn red if left on long enough.
I planted a pepper plant that the peppers start out ivory then turn different shades of red if left on. I am waiting on the big one on the plant to turn color yet.
I have not eaten any but my boss says they are very sweet and crisp.
I once convinced the kids that the red ones tasted like cherry, the yellow ones like lemons and the green ones like lime. They actually thought they could taste those things in the peppers.

I love red, yellow and orange bell peppers but not the green ones. They repeat on me.
When bell peppers a cheap in the store I buy a bunch and roast them on a tray in the oven. Some times I put some carrots and onions in with them. Then I puree them, cool and freeze in 1/2 cup contains and freeze. Great in with spaghetti sauce. Even the cheap canned sauce.
