I marinate pork chops (or chicken tenders) in Italian dressing and then grill them. They cook quickly and the dressing always tenderizes them. I add a box of stove top and a salad to finish the meal. The whole family loves it and it is quick and easy.

One of our favorites is make your own grilled pizza on pita bread. Have all the topping set out, you make you own pizza and grill it. There are tons of toppings you can use, uses up left overs too.

I use Homemade Gourmet seasonings/mixes for the majority of my home cooking and I can see that they will be useful for camp cooking as well!!

Fajitas are a colorful main course I serve them with a side of pinto beans. If the kids don't like fajitas, you can quarter hotdogs and grill them alongside the fajita meats. Serve the dogs in half a tortilla, add some cheese and call them Chihuahuas.
As a side dish with pork, try sweet potatoes and apples. I cut sweet potatoes into 1/4 in slices, add slices of a sweet apple, and season with cinnamon. I make a foil packet no more than an inch high and turn it a couple of times on the grill. They cook really fast. Make sure and use spray oil under and over the potatoes. I have used pineapple instead of the apple and it is good.

If you have a panini maker, they make ANY sandwich better, it seems. We make grilled cheese, grilled PB & J, turkey/bacon/tomato, Monte Cristos, beef/cheddar...whatever. They also are good for quick quesadillas (chicken with taco seasoning, green chilis, corn, jack cheese) or breakfast sandwiches (a tortilla filled with scrambled egg, cheese, ham, leftover veggies)
My kids love tuna macaroni salad. Cook 2c macaroni ahead. Dressing: 1/2 c. mayonnaise, 2T juice from a jar of green olives - stir. Pour over macaroni. Add a few tablespoons of chopped stuffed green olives and a large can or large packet of tuna and some black pepper. Stir and serve.
We also like couscous. I make it with chicken or beef broth rather than water. Add a couple of cups of pre-cooked meat and leftover veggies (grilled onion and peppers are awesome) or steam some vegetables in the broth before adding the couscous (carrots, zucchini, peas, asparagus).

Count how many dinners you will have to prepare, select the meat and make sure you have 2 sides for each night, plus a salad.
I make meatballs and sauce ahead of time and freeze it flat.
I also make Taco Soup and freeze it.
Tuna salad, chicken salad, potato salad, cole slaw are all made ahead of time and in the fridge for quick lunches.
Use a whole loaf (or 2) of fresh French bread sliced lengthwise lightly brush the inside with olive oil, stuff it with ham, swiss, mortadella, salami and olive salad wrap in foil, heat thoroughly then flatten it just a little. Open foil and slice into 5" lengths, serve with cold mustard potato salad and freezing cold beer. YUM!.
What about Shepherd's Pie and tuna noodle casserole? These were always mainstays when camping with kids. They are always easy and so delicious after a long day of sun and fun. They can be made in an iron skillet outside over the fire - by the kids!

I feel for you! I am in the process of packing the 5r for a 17 day trip. I will have access to stores for more fresh produce and breads, but am trying to get as much done here as possible. Yesterday, I browned up 6lbs of hamburger with onions, garlic, salt and pepper. Froze in seal a meal pouches. Now all I have to do is add sloppy joe sauce, taco or burrito seasoning, etc. but most of the dirty work is done.
I have several seal a meal pouches of pulled pork for sandwiches. Homemade meatballs, and pre browned italian sausage also done. I can easily open a couple cans of tomato product, doctor it up with herbs and spices, and toss in the meat. I also made some beef stew yesterday, without the carrots or potatoes, and froze that, when we are ready to eat it I will add the veggies and cook until they are tender and then they won't be mushy.
It's a lot of pre cooking and planning, but it will keep me out of the kitchen, and outside where I want to be.

We do the same thing, but with flatbread. (I use Tandoori Naan). It's a great way to have quick meals, especially on our arrival night. I make the sauce before we leave and chop any veggies. At camp we put the pizza together and grill for about 5-8 minutes.
When we need quick breakfasts I bring bagels and toast them on the grill. I get the individual sized packets of cream cheese from Costco and we're all set.
I've done chili in a dutch oven (the porcelain coated kind). I brought stew meat, pre-chopped veggies, cans of diced tomato, tomato sauce, and my spices. I browned the meat then dumped everything in and left it to cook for about 3-4 hours on the Coleman camp stove. I brought disposable bowls, sour cream and cheese to top it with and also hot dogs to make chili dogs. It was delish!
We've done philly cheesesteak. I get deli sliced roast beef then cut it and the veggies at home. At camp, dump it all into a skillet and cook, top with cheese then serve on a bun. I made french fries in the oven to go with it.
We love making hot sandwiches in a pie iron over the campfire. It's like having a panini without bringing the griddle. We picked one up at Camping World and I just saw one I liked at REI.
