Where are yo staying? We just came back rfom Kitty Hawk and stayed at Kitty Hawk RV Park, 150 feet off beach and nice park. A little close but we experinced no noise and it is clean. No showers or laundry and I made the mistake of thinking I would rent a car. Bad thought, $50 per day, drag your towed along.

We grilled steaks at evening meal several times, nuc'd the potatoes and had store bought cole slaw and lemonade. Sandwiches for lunch and did the sea food all you can eat deal once, don't waste your money it is hard to eat $30 worth of anything.

We drove from Ohio and in W va found the state parks to be very nice.

try cut up potatoes, with cut up polish sasuage, onion diced in a foil pan greased over the fire and for a variation towards the end of trip we cut up any meat cooked over the fire and yes we will cook a lil bit extra just for this (steak,chicken,burgers,polish sausage,hot dogs etc...) and make a pot of chilli. So good that everyfall we go we meetup with a fellow rver who happens to be next door everytime we showup and he will come over with bowl asking if we are going to be having chilli...lol we only see him once a year and he remebers it. If its easy I cook it also try cooking corn on the cob leaving in the husks!!!! SSOOO GOOD!!!! just remove the silk and soak in water for 30min then grill and enjoy with lots of butter......

Here is a link to a list of Foil Packet Meals like Camping In The Woods suggested. These are great camping and each person can make their own.

Like Mrs. Mik, I too write out a menu for each meal that I fix at camp. From my menu I can easily write out my shopping & packing list. I seldcom forget an ingredient and I never over pack, which means I have less to unpack when we get home!

We have done a baked potato meal. Bring meat, (like taco meat, spaghetti sauce, hamburger and gravy, etc), cheese, onions, etc as toppings. The potatoes can be baked ahead of time and just heated up. Each person adds their own toppings and enjoy!

We do it with chopped bbq brisket and smoked chicken.

I don't really do a menu, but more of a guideline. I have a few meals planned, but can mix and match. I always plan on one night per weekend that everyone is too tired and hungry to do anything but heat leftovers or something else that is fast and easy.

The hardest thing for me is going to be not having the flexibility to cook whatever whenever. I've got a small bedroom that's a pantry, a small freezer, and the freezer in my side x side, plus the 25cf freezer.

I found that on our trip back here no matter what meals I had planned something came up. It was just the two of us, and we found a protein and salad were the easiest. It was our first RV experience so we were really playing it by ear.

I am going to hope that as we travel we'll be able to shop fresh and local for many things. I'll have lots of stuff prepped and in my little freezer. Inspiration for me comes from whatever we find that strikes us. Oh, and a well stocked but smaller pantry.

For a family for a week I'd be sure to have spaghetti sauce, chili, and similar stuff frozen in foodsaver bags. A rotisserie chicken can feed a good sized family if added to a salad or pasta dish. All of the other suggestions are wonderful - and from far more experienced RV'er's than us.

I know our George Forman G5 is going with us, along with the crockpots. A pork butt with enchilada or chile sauce, sauerkraut & apples, or just BBQ sauce stuffed in a crockpot on low all day will provide wonderful meals. Add tortillas and beans with a bag of salad makes a perfect dinner (add cheese and some salsa). . . cornbread and some potatoes make a perfect dinner with the kraut or the BBQ sauce. Leftovers make burritos, or sandwiches.

Now - I must play "food nazi" for a moment! Please thaw foods in the fridge overnight, using the thaw cycle on the microwave, or under cold running water. Leaving food to thaw on the counter (or in the sink) gives plenty of time for bacteria to grow. I've got friends who insist on doing this - and every time we eat at their places I get some issues. EEEEEEwwwwwwww!

Add smoked pork tenderloin or smoked/deep fried turkey, then your favorite cheese. On the top piece of bread spread homemade cranberry relish and grill. C'est Bon!!! Cranberry relish recipe is 1-12oz fresh cranberry or Craisins and 1 whole orange(yes peeling and all)cut up. Put all in food processor and grind thoroughly. If using fresh cranberry add 3/4 cup sugar after grinding. Craisin version already has sugar added. DELIGHTFUL.

A dear friend who's a chef shared this recipe which is perfect for RVing.

Slow Cooked Chicken & Burritos

4 frozen burritos, beef or bean & cheese (we used chicken & rice, and we've used frozen tamales)
2 - 4 chicken breasts
1 14 1/2 oz can enchilada sauce
Cheddar cheese

On the bottom of a slow cooker place the frozen burritos. Lay the chicken breasts on top and cover all with enchilada sauce. Cook on low 5 to 8 hours. The last few minutes sprinkle with the grated cheddar cheese.

To Top: shredded lettuce, chopped tomato,onions, and sour cream.

These are so good, and you can adjust the recipe depending on the size of your crockpot.

I just sent this crockpot/burrito recipe to my daughter. She always has a houseful of hungry teenage boys. This sounds yummy and cheap.
