I have a Palomino Stampede 21sd. I have camped in it quite a few times and one thing that I have found is that the air doesn't quite make it into the bunk ends. I can wake up sweating, get up and in the main area of the trailer, it's very chilly. Even with the curtains wide open, the air seems to hit a wall and stop. We have since gone with a fan to help force air into the bunk. It's a good thing I don't mind the noise, because between the fan and the ac, it's really loud. Has anyone else had issues like this?

I have the same issue with my Sunnybrook. We use small fans to circulate the air to the front & rear of the camper. Ours has the ducts in the ceiling but they don't work great (I have checked to make sure the seals/duct tubes etc. were all sealed and unobstructed) so we leave the main air dump open and set up fans. Keeps it nice and cool but the noise is pretty bad.

Maybe try closing some vents where it's cold and it might force more air to the bunk area.As for the fan, always a couple box fans with us,the fan noise puts me right to sleep and drowns out the kids when they get up too early.

do you have ducted a/c or "Blast From the Center" a/c?

because you shouldn't have this issue with ducted. sounds like a "BFC" unit.

If you do have the ducted a/c, closeup the middle vents and direct the end ducts straight to the bunks. If you have the center blast type, placing a small fan on your dinette and pushing the air horizontally will help. Solar blankets/gizmos will make a big difference, even at night. I found myself pulling the covers up in the rear bunk of our Roo two weeks ago at two in the morning. It was still 85 outside and muggy but inside the a/c was shutting off for 20 minutes at a time. Now that's camping.

Hmmm...would have guessed ducted to stir less air.

To much air movement is actually one of our complaints with center blast.
We readjust the vents and pull the curtains before going to sleep to keep the strong current of air off of us.

They make bunk fans for a reason.

You need something to push the air out into the bunks.

I have a Roo Hybrid. Is it a good idea to crack a window, open a roof vent or crack open a flap in the bedrooms to assist with better a/c circulation and also prevent dew from forming on the inside of the ceiling canopy in the bedroom?

yes! whether you're using a/c or not, you need to allow for air movement. this will help prevent condensation(not dew)from forming on the inside of the canvas, especially at night.
also, PUGs or solar blankets will also help with condensation, reflecting or retaining heat and keep the canvas clean.
