Don't need to grill them; kind of ruins the whole idea...We tried them 2 weeks ago and they were great and very simple to make....Matter of fact the DW is making them again this afternoon. We serve with rice and broccoli or asparagus.

This sounds so good and I like the idea of NOT having to grill them! I plan on scaling it down for just me and giving it a try for supper tonight.

Should the skillet be covered, while cooking?

No; the whole idea is to let the marinade evaporate.( I think...my wife does the cooking) I think the instructions are pretty clear if you click the link. Had em again the other day and they are good!

There is an important reply on the original recipe post that makes a very good point!
You really do not want to cook the chicken in the pan for the entire 40 minutes. Overcooked chicken is not a good thing. I plan to cook the chicken all by itself in the pan first, (preferably toasted in spots for the full effect), then remove from heat. Then, I'll reduce the liquid in the same pan until the "goodness" appears, then reintroduce the chicken to warm and coat with sauce.
I need some lime juice to try this one out!!

Made this the same night as it was posted. A keeper as I really liked it and was very easy to make.
Thanks for posting this!
