RE: 70 yr old Person's Childhood Omelette

I have never heard of either flour or pancake mix in an omelette. That is why I love coming here...learn something new every day!! IHOP does that to their omelettes. I find that it makes them a little "heavy/chewy".

RE: New Diet for me...

Wow! That seems like one heck of a diet. It seems very similar to the Paleo diet that 2BH has been so successful with.

RE: Sandwich maker

I have one,and it is really great if there are only two of you camping. For the four of us, it took way too long for all of us to eat. The first two were done way before the second two were ready. (omelettes).

RE: looking for extended stay in Longbeach, CA area

http://rvparkreviews.com/regions/California/Westminster.html Kind of small, but closer to Long Beach. The beach locations are virtually impossible to get in the summer months. http://rvparkreviews.com/regions/California/Westminster.html I live in this neighborhood. I can tell you it is the closest RV park to Long Beach

RE: Brussels sprouts cooking question...?

Brussels Sprouts are really an art... they come in so many sizes- If they are tiny, you need only cut a deep X in the base, if they are huge, you need to halve them. But regardless... they need to go into boiling salted water until they just begin to get tender. Take them out of the boiling water, and IMMMEDIATELY immerse them in ice water. When they are completely coooled, you can drain them, and finish them in many ways. My family likes, Butter, garlic, and Lemon. Another way to do them, is roasted.... oven at like 375- toss the sprouts with olive oil, salt pepper and minced garlic. Roast them until browned and tender. Finish with Balsamic Vinegar

RE: bryce canyonn cg suggestions

Take a look at Tropic Reservoir, at 8000 ft elevation. Also called Kings Creek the 37 campsites are near Tropic Reservoir, OHV enthusiasts use this campground as a home base for accessing the miles and miles of nearby ATV trails, including the East Fork and the Fremont. Hikers, mountain bikers, and equestrians appreciate the easy trailhead access to the Great Western Trail. Anglers can test their fishing skill either in the lake or in the East Fork of the Sevier River, which forms the reservoir. Bryce Canyon National Park is about 12 miles away, on FR 087. The road in is good for your size rig. Fished there several times while in the area. Rode our Jeep and RZR all over. Beautiful area. good advice from this post! there are no hook ups if you go to Tropic lake but really good camping there. The road is good, two lane graded and often has that chemical on it to reduce dust. Easy to get any size RV in and out of there. Red Canyon is a nice camp ground, not ATV friendly but hiking and biking plentiful Red is sort of like camping down in Bryce Canyon. Ruby's is about the best place if you desire hook ups. Casto Canyon is a terrific ride but is a 50" trail, so if you are not bigger go check it out (can get there from Ruby's or Tropic) but if you are wider watch out, the rangers patrol and are will give you truoble if wider than 50".No problem, we go there in our Raptor 3612 every summer. It is awesome and not to be missed. BTW If you do not want to "dry camp" and dont want the "closeness" that Rubys offers, then Bryce Canyon Pines CG is awesome and has full hook ups..

RE: Salmon

I make it several ways... Last week I tried this recipe and it was GOOD. IMHO it really didn't need the sauce. Ingredients 1/4 cup finely chopped pistachios 1 clove garlic 1 tbs parsley 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 1/2 cup panko bread crumbs 2 tbs whole grain mustard 2 (4-ounce) fresh salmon fillets 2 tablespoons extra-virgin olive oil Lemon Cream Sauce, recipe follows Directions In a food processor or mini chopper, combine the pistachios, parsley, garlic, bread crumbs, oil, salt, and pepper. Salt and Pepper the salmon, spread liberally with mustard on the flesh side. Press the salmon mustard side down into the crumb mixture. Use any leftover crumb mixture to pile on top of the fish. In a cast iron skillet, heat the oil over medium-high heat. Add the salmon skin side down (crumb side up) and cook for about 3 minutes. Immediately put the skillet into a 400 degree oven and cook for approximately 8 minutes. Transfer the fillets to serving plates. Serve with Lemon Cream Sauce, and garnish with chopped pistachios, if desired. Lemon Cream Sauce: 1 tablespoon butter 1 tablespoon all-purpose flour 1/2 cup chicken broth 1/4 cup heavy whipping cream 2 teaspoons lemon zest 1/8 teaspoon fresh lemon juice 1/2 teaspoon salt 1/8 teaspoon ground white pepper In a small saucepan, melt the butter over medium-high heat. Add the flour, whisking to combine and cook for 2 minutes. Reduce the heat to medium; stir in the broth and cream and simmer until thickened, whisking frequently, about 3 minutes. Add the lemon zest, lemon juice, salt, and pepper, whisking to combine. Cook for 2 minutes, whisking constantly. Pour into a serving dish and serve with the salmon

RE: cooked chicken thighs

Hey Chris- how about Buffalo Chicken Salad or Wraps? Cut up the chicken and toss it in some Buffalo Sauce, reheat it in the sauce, then top lettuce, diced celery, crumbled blue cheese, and serve with ranch or blue cheese dressing..

RE: Recommendation for pot for stove, convection and microwave

To my knowledge, Pryex cannot be used on a stovetop. I believe it is microwave or oven only. That may be the best option though, some Pyrex and a separate set of stackable pots. Pyrex? This is what I was talking about....Visions glass cookware

RE: Prime rib cooking at campsite?

We cooked a big ole prime rib in my brother's Charbroil Big Easy Infrared Turkey Fryer It came out picture perfect and it tasted really good too! We cooked a turkey in the Big Easy last Thanksgiving at camp and it was picture perfect, tasted great and the Big Easy catches the drippings, so we were able to make turkey gravy too! Ditto what she said... we've done prime ribs, turkeys, pork loin roast and whole filet mignon roasts (use metal skewers to suspend in the basket.)
