Do you have to worry about diabetic people? I know when DH sister was in an assisted living place some of the food items should never have been given to a diabetic.
Make muffins ahead of time and they can be warmed in the microwave oven. Serve with applesauce or mixed fruit. The mixed fruit could have yogurt on top.
Make yourself a ten day menu and just rotate.

I have some of these muffins/cupcakes in my freezer right now. I used a spice cake, small can of pumpkin, 1/2 cup of Eggbeaters or a combo of egg and egg white and 1 cup mini chocolate chips. The cinnamon chips are really good also.

I'm on my second Food Saver too. I don't use it a lot but love to buy a slab of salmon and cut it up in serving size pieces and Food Saver it.
What I really really like are the Food Saver Jars. I use them to keep berries in and they last so much longer in the refrig. Also coffee for company as we are not coffee drinkers. The coffee jar does retain it's coffee smell.

I have stored can goods in dish pans. Put a layer in a pan on it side and then on top put on another dish pan and more cans. Three dish pans of canned goods fit nicely under the sink on the floor. Easily to slide out and get what I need.

I've been reading my May/June Escapees magazine and there is a non commercial article in it about the STRONGBACK CHAIRS that Fred42 mentioned. There is a smaller model for those with shorter legs and an elite model with a little wider seat and taller back, has padded arms that make it easy to stand up and it seems to suit taller, heavier built persons. Jeff, that stretch of beach always intriques me. When you drive by on the freeway you wonder how did they get oout there. From my memory that isn't free camping either.

My last crock pot came with a rubber band like thing that will wrap around the handles and over the lid to keep it firmly in place.

For years I packed three plastic dish pans full of canned items. And each time when we got home I unloaded three pans full of canned items. Now I start out with frozen items for about 3 - 5 days of suppers. I also have breakfast and lunch stuff and basic pantry supplies of spices, cooking spray, seasoning mixes etc. The rest of the time we just make a stop at a grocery store. There is generally a Super WalMart down the road.
