So, I'm wondering, does the dining establishment actually say "all you can eat Coyate"...or is that a typo and do they say "all you can eat COYOTE"?
I'm wondering if it's like a dish prepared with imitation "Krab", as opposed to a dish prepared with real "Crab"?
Which makes me wonder, how does one get a permit to serve "Coyote"? It's not a recognized game animal anywhere I'm aware of.

On road kill....................anything you find alongside or on the road that is freshly killed, normally makes a great meal.
However, Make sure you see the skid marks before picking up any road kill, 99% of all motorist try to avoid God's animals, but every day there are lawyers killed on the road, and there are no skid marks identifying them. They must taste bad .

Ahh...Astro,me thinks you be much to serious'bout things. But just to let ye know,ye need no "permit" to serve coyote or coyate.Ye do however need a strong stomach and a hearty appetite to eat it.Now if it be served with Krab,it is a delightful dish.
